Taverna [Taverna]
The dictionary definition of “taverna” is a casual restaurant that serves simple Greek cuisine. However, the true essence of the Greek taverna goes far deeper than that. It is the place where Greek cuisine blossoms, where people meet, where groups of friends are formed, where each day small rituals of generosity are enacted and we raise our glasses to everyone’s health.
" It's a relaxing haven after a dip in the sea. It's the 80-year-old granny peeling potatoes. It's the sound of waves lapping on the beach as you relish grilled octopus. It's the way we dine out and all talk loudly at the same time. A taverna is a delicious, warm Greek embrace. Please, come in... " - Ioanna M. Pavlaki
The idea for this cookbook was born in the summer of 2017 on the beautiful island of Mytilene (Lesvos), as I sat at a taverna by the sea, with a glass of ouzo in hand and the sunbeams caressing my face. A Norwegian couple, Jonas and Anna, were at the next table. We started chatting about their holidays in Greece and before long we were sitting together, toasting each other and savouring the delicious mezedes of Mrs Fotini. When it was time to say our goodbyes, we took a selfie to capture the moment and Anna exclaimed: “What an experience!
Yes, indeed. The microcosm of the Greek taverna offers a unique experience not only for visitors from abroad but for us Greeks too. At every table, the pure tastes of Greece are unveiled, and with them the values of sharing, of generosity and of gratitude.
This book, "MY Greek Taverna", grew from the ambition to capture and illustrate these unique moments, these genuine rituals. It brings together the most best-known and beloved Greek recipes served at our tavernas. Using simple ingredients that can easily be found outside Greece, and have been written by the cook Makis Georgiadis, in such a way that Greek cuisine can become an everyday choice on your table.
"Allow yourself to be carried away by the magic of Greek cuisine and enjoy the taste of Grrece in your own home every day. The secret of success: quality ingredients and lots of love. Happy cooking!"- Ioanna M. Pavlaki
